Tasting Notes
This is wonderfully complex from the moment it hits the glass.
Expect layers of:
- Nashi pear
- White peach
- Green apple
- Honeysuckle
- Jasmine and white flowers
- Citrus
- Oyster shell and brine
- White pepper and exotic spice
- Beeswax
- Subtle creamy notes
- Chalky minerality
The palate is where this wine really comes alive.
There's beautiful fruit weight and texture, but also tremendous energy. Fresh pear and crunchy green apple run through the centre while a fine chalkiness provides grip and definition.
It's rich without being heavy, textured without becoming broad, and incredibly fresh despite its concentration.
The winery describes the wine as textural and lightly tannic, with ceramic-egg maturation contributing chalkiness and grip to the long, bright palate.

A Rhône-Inspired Yarra Valley Blend
The 2024 blend is:
46% Marsanne
30% Roussanne
16% Grenache Blanc
8% Viognier
It's a fascinating combination.
Marsanne provides body, texture and pear-like fruit.
Roussanne contributes perfume, richness, herbs and complexity.
Grenache Blanc adds freshness, citrus and drive.
Viognier lifts the aromatics with flowers and stone fruit.
Together they produce something completely different from conventional Australian white wine.
It's one of those wines where you keep finding something new every time you return to the glass.
Fascinating Winemaking
The winemaking is just as interesting as the blend.
Each grape variety is harvested separately at optimum ripeness, with the fruit hand-picked, chilled overnight and then whole-bunch pressed.
The unclarified juice is gravity-fed into seasoned French oak barrels, while portions of the Marsanne and Roussanne are fermented and matured in ceramic eggs.
The individual components then remain undisturbed for approximately 10 months before blending and bottling.
The ceramic eggs are particularly interesting because they contribute texture without introducing oak flavour.
That's part of what gives Dry White No. 2 its distinctive combination of fruit weight, chalkiness, grip and freshness.

What I love about this wine is that it demonstrates why Yarra Yering remains such an important Australian estate.
They don't simply make Chardonnay, Pinot Noir and Shiraz because those are the varieties people expect from the Yarra Valley.
They make wines with identity.
Dry White Wine No. 2 takes varieties more commonly associated with the Rhône and gives them an unmistakably Yarra Valley interpretation—fresh, detailed, beautifully structured and completely distinctive.
And Yarra Yering's overall standing has never been stronger: the estate was ranked The Real Review's Best Australian Winery for 2026.

This is an exceptional food wine.

The white flowers, pear, stone fruit and spice are beautifully expressive, while the palate already has terrific texture.
But the combination of fruit concentration, phenolic grip and acidity suggests this should become increasingly complex with bottle age.
