2025 Salo Chardonnay – Yarra Valley

What a way to start.

Salo is the Chardonnay side project of two seriously talented Yarra Valley winemakers, Steve Flamsteed and Dave Mackintosh.

The 2025 comes from the Full Moon Vineyard at Gladysdale in the Upper Yarra, planted on red and brown volcanic soils. The fruit was whole-bunch pressed, wild fermented in seasoned puncheons and partially put through malolactic fermentation.

Halliday's Philip Rich awarded it:

96+ POINTS

while Campbell Mattinson gave it 96 points, describing a beautifully harmonious Chardonnay built around white peach, cream, preserved lemon and honeysuckle.

Expect nectarine, citrus peel, flint and subtle marine characters, with gentle creaminess followed by a long, chalky, tensile finish.

Upper Yarra Chardonnay at its best.


2025 Gaffy & Neal The Peninsula Chardonnay – Mornington Peninsula

This is one of the Chardonnay projects we're most excited about in Australia right now.

The collaboration between Darrin Gaffy and Doug Neal is tiny and completely Chardonnay focused.

And The Peninsula is the serious stuff.

The 2025 is loaded with lime, white nectarine and grilled grapefruit, salty sea air and spicy citrus-inflected oak.

Then comes a palate that's:

Tightly coiled. Powerful. Creamy. Mineral. Seriously long.

Gaffy & Neal themselves say:

“This is as close as we have come to perfection thus far.”

That's a big statement.

But taste the wine and you'll understand the excitement.

This is serious Mornington Peninsula Chardonnay.


2025 Bannockburn Chardonnay – Geelong

Now we move to one of the great names of Victorian Chardonnay.

Bannockburn.

Bannockburn has been producing Chardonnay and Pinot Noir from its distinctive Geelong vineyards for decades, developing a style with genuine personality.

These aren't anonymous, technically perfect Chardonnays.

They taste like Bannockburn.

There's typically richness and texture, but also citrus, stone fruit, savouriness, mineral character and serious structure.

This is Chardonnay that can be incredibly attractive young but also has the architecture to develop beautifully in bottle.

A benchmark Victorian producer and an essential inclusion in the Dream Team.


2024 Savaterre Chardonnay – Beechworth

One of Australia's great Chardonnays. Full stop.

This is the heavyweight of the pack.

The 2024 Savaterre Chardonnay comes from Keppell Smith's mature, close-planted Beechworth vineyard and was produced from a tiny crop in an exceptional season.

And the reviews are enormous.

Expect white flowers, lime blossom, white nectarine, pink grapefruit, toasted hazelnut, beeswax, sandalwood and subtle flint.

The palate is powerful and concentrated, yet there's extraordinary acidity, precision and length holding everything together.

2023 Sentio Captain's Creek Vineyard Chardonnay – Macedon Ranges

Then we get to one of my favourite emerging Chardonnay stories.

Sentio.

Chris Catlow has developed a serious following for Chardonnay, making beautifully detailed wines from some fascinating Victorian sites.

The Captain's Creek Vineyard Chardonnay shows a slightly fleshier, more generous side of Sentio while retaining the precision and structure that makes these wines so compelling. James Suckling specifically noted its more fleshy, mid-weighted personality compared with the typically skeletal Sentio style.

Think:

White peach. Citrus. Stone fruit. Mineral. Savoury oak. Fine acidity.

There's generosity through the middle, but everything remains beautifully controlled.

Sentio is a name every serious Victorian Chardonnay drinker should have on their radar.

And this is a brilliant bottle with which to understand why.


2024 Heroes Original Vineyard Chardonnay – Otway Hinterland

And we finish with one of Victoria's most exciting emerging producers.

Heroes Vineyard.

Not Anti-Hero.

Not purchased fruit.

This is the Original Heroes Vineyard Chardonnay.

The 2024 received:

96 POINTS – HALLIDAY WINE COMPANION

Philip Rich highlighted its white nectarine, quince, beeswax and grilled nuts, along with the wine's genuine weight, intensity and fine line of acidity.

The vineyard sits in the remarkably cool Otway Hinterland, with sandstone, siltstone and sandy clay soils.

And the numbers are extraordinary.

Fruit was harvested at just:

1kg PER VINE

before whole-bunch pressing and wild fermentation in French oak.

It then spent ten months in:

100% second-fill French oak.

No new oak required.

Total production?

ONLY 90 CASES.

Halliday's Philip Rich said he was “blown away by the entire range of 2024s” from Heroes.

Once people discover Heroes, these tiny-production wines aren't going to become easier to find.
