Tasting Notes

Appearance: Opaque purple-black with a vibrant crimson edge — rich and alluring.
Aroma: Perfumed and intense. Blackberry, plum and blueberry meld with violet, dark chocolate, black pepper and subtle cedar spice.
Palate: Full-bodied yet impeccably balanced. Dense dark fruit flows through graphite-fine tannins and cool mineral energy. Elegant acidity frames richness with precision — a modern, polished Barossa Shiraz.
Finish: Long, savoury and layered — dark fruit, spice and earth echoing with grace and length.

Vineyard & Winemaking

From the Bachelor’s Block, a single site of ancient, dry-grown vines in the northern Barossa sub-region of Ebenezer — renowned for producing some of Australia’s most celebrated Shiraz.
Low yields, deep red soils and a warm microclimate create fruit of intense flavour and natural balance.

Winemakers Giles Cooke MW and Fergal Tynan MW work with meticulous restraint:

  • Hand-picked fruit

  • Wild fermentation with gentle extraction

  • Aged 12 months in French oak (≈ 30 % new)

The result is a wine of depth and finesse — powerful yet silken, structured yet beautifully pure.

Region

Ebenezer, Barossa Valley — the northern heartland of Australia’s most prestigious Shiraz.
Here, old vines and ancient ironstone-rich soils yield wines of exceptional density, floral lift and age-worthy structure.

Food Pairings

  • Wagyu rib-eye with black pepper jus

  • Roast lamb with rosemary and garlic

  • Venison or kangaroo with red wine reduction

  • Chargrilled eggplant with smoked paprika

  • Hard cheeses such as aged cheddar or pecorino
