Behind Sentiō is Chris Catlow, a Beechworth native whose winemaking journey included working with Barry Morey at Sorrenberg, studying viticulture and wine science, seven vintages on the Mornington Peninsula and an impressive five vintages in Burgundy. His philosophy at Sentiō centres on making wines that clearly express where they come from.
The 2025 Sentiō Beechworth Shiraz is the latest release from this exciting producer and continues Catlow's exploration of elegant, site-driven Beechworth Shiraz.

Tasting Notes
Expect a vibrant, aromatic style of Shiraz with:
- Raspberry and blackberry
- Dark cherry and red plum
- Violets and lifted florals
- Cracked black and white pepper
- Dried herbs
- Savoury spice
- Graphite and granitic minerality
Rather than relying on sheer weight and ripeness, this is Shiraz built around perfume, texture, freshness and detail.
The fruit is bright and energetic, with savoury spice and pepper adding complexity before fine tannins carry everything through a long, fresh finish.

Why Beechworth?
Beechworth has quietly established itself as one of Australia's great small wine regions.
Its combination of altitude, granitic soils and significant differences between vineyard sites allows producers to craft wines with remarkable intensity while retaining freshness and precision.
Sentiō's recent Beechworth Shiraz has been sourced from the Simon Maulsem Vineyard in north-west Beechworth, on sandy granitic soils, with additional fruit from Indigo. The previous release incorporated 20% whole bunch, contributing spice and white-pepper complexity.
The result is a style of Shiraz that prioritises perfume and elegance over sheer power.
A Producer to Watch
Sentiō is first and foremost about place.
Chris Catlow works with carefully selected vineyards and uses his winemaking to reveal rather than overwhelm their character. Sentiō describes its wines as expressions of the vineyards, regions and conditions of each vintage.
And the quality of the Shiraz is already well established—the 2023 Sentiō Beechworth Shiraz received 96 points from Halliday Wine Companion.
