Tasting Notes

Appearance: Bright, deep ruby with youthful crimson highlights and beautiful clarity.

Aroma: Layered aromas of dark cherry, wild strawberry and raspberry, complemented by rose petals, subtle spice, forest floor and mineral notes.

Palate: Rich and structured yet unmistakably elegant. Dark cherry and black fruits sit at the core, wrapped in supple, velvety tannins and vibrant acidity. Savoury spice and earthy mineral characters emerge with air, adding complexity without overwhelming the purity of the Pinot Noir.

Finish: Long, refined and persistent, with dark berries, spice and fine tannins carrying through a beautifully poised finish. Domaine Matrot itself describes Santenots as producing complex wines that combine richness and structure with elegance, dominated by black fruits and broad, velvety tannins.

Santenots – A Fascinating Premier Cru

Here's one of Burgundy's wonderful quirks.

The Santenots vineyard is actually located within the commune of Meursault.

But when Pinot Noir is grown here, the wine can be labelled:

Volnay 1er Cru Santenots.

It's a terroir capable of producing a more powerful and structured expression of Volnay while retaining the appellation's famous perfume and finesse.

That combination is exactly what makes Santenots so exciting:

Volnay elegance + Santenots depth and structure.

Vineyard & Winemaking

Domaine Matrot's Santenots comes from Pinot Noir vines averaging approximately 30 years of age.

The fruit is 100% destemmed, followed by a cold maceration at around 10°C for three to six days.

Fermentation takes place naturally with indigenous yeasts over approximately 12–18 days, with extraction adjusted according to the vintage.

The wine is then matured for:

15 months in French oak – only 20% new

followed by another three months in tank before bottling.

That restrained use of new oak is important.

This isn't Burgundy where the barrel dominates.

The focus remains firmly on:

Pinot Noir. Vineyard. Terroir.

Domaine Matrot

Domaine Matrot is based in Meursault and has been in family hands for generations.

While many Burgundy lovers immediately associate Matrot with white Burgundy, its holdings also produce some seriously compelling Pinot Noir.

And Santenots is one of the most interesting.

The domaine has followed environmentally conscious farming practices for decades, progressively eliminating chemical treatments and moving its vineyards to organic cultivation.

2023 – A Serious Santenots

The 2023 has already attracted strong attention in France.

La Revue du Vin de France awarded it 96/100, describing a powerful, structured wine with dark cherry, strawberry, floral and spicy complexity, supported by substantial yet velvety tannins.
