🔥 NOT THE STANDARD CHABLIS — THIS IS 100% DROUHIN ESTATE FRUIT.

Exclusively From Drouhin Family-Owned Vineyards, Between Montee De Tonnerre And Mont De Milieu.

This is Chablis with extra pedigree.

This is where Drouhin’s Chablis story gets more serious.

The standard Chablis is excellent.

But Réserve de Vaudon has an important difference.

The fruit comes:

EXCLUSIVELY FROM DROUHIN FAMILY-OWNED VINEYARDS.

And those vineyards are mainly situated in the Vauvillien Valley, between two famous Chablis hills:

MONTÉE DE TONNERRE.

And:

MONT DE MILIEU.

That is seriously interesting real estate.

The 2023 Drouhin-Vaudon Réserve de Vaudon Chablis is everything you want from classic Chablis.

Lemon.

Citrus.

Fern.

Subtle marine character.

Salinity.

Minerality.

Fresh acidity.

Finesse.

Balance.

And absolutely no need for oak.

This is Chardonnay stripped back to vineyard and terroir.

DROUHIN-VAUDON

Drouhin-Vaudon is the Chablis estate of Maison Joseph Drouhin.

And the Drouhin family was one of the major Burgundy names to recognise Chablis’ potential when the region was struggling.

In the 1960s, Robert Drouhin began investing in vineyards there and helped restore important sites to serious wine production.

Today the family farms a substantial estate with a long-established focus on organic and biodynamic practices.

And Réserve de Vaudon is a particularly important bottling.

Because unlike the standard Drouhin Chablis, which can include purchased fruit and must, Réserve de Vaudon comes only from Drouhin family properties.

VALLÉE DE VAUVILLIEN

This is the detail I’d really sell.

The vineyards are mainly in the Vauvillien Valley.

And where is that?

Between:

MONTÉE DE TONNERRE.

And:

MONT DE MILIEU.

Two highly regarded Chablis sectors.

The valley is described by Drouhin as a corridor of vines nestled beneath steep slopes.

And scattered through the soils are the famous fossil-rich stones that define the region.

That gives Réserve de Vaudon a very strong sense of place.

Not generic Chablis.

Not anonymous regional fruit.

Estate vineyards.

Specific valley.

Specific terroir.

KIMMERIDGIAN LIMESTONE

This is the geological backbone of Chablis.

KIMMERIDGIAN LIMESTONE.

Limestone.

Marl.

Ancient marine fossils.

Drouhin specifically highlights the fossil-rich limestone as one of the key elements behind Chablis’ distinctive character.

And that influence comes through here as:

Minerality.

Saline character.

Freshness.

Tension.

Citrus.

Length.

This is why Chablis doesn’t taste like generic Chardonnay.

THE WINEMAKING

This is pure, restrained Chablis winemaking.

The grapes are slowly pressed as whole bunches in a pneumatic press.

The final press juice is separated from the free-run juice.

Then fermentation takes place in:

STAINLESS STEEL.

And élevage?

Again:

STAINLESS STEEL.

For approximately:

7 TO 10 MONTHS.

No oak.

No toast.

No vanilla.

No buttery barrel character.

Instead:

Fruit.

Acidity.

Minerality.

Salinity.

Terroir.

Exactly what you want from Chablis.

TASTING NOTES

The colour is bright.

Often with subtle green reflections.

Then the aromatics arrive.

Lemon.

Citrus.

Fern.

Fresh herbs.

Then something distinctly Chablis.

Saline.

Marine.

Almost iodine-like.

The palate is energetic.

Vigorous.

Lively.

But not hard.

There’s softness underneath.

Finesse.

Balance.

And enough breadth from the warm 2023 vintage to make the wine especially appealing now.

LEMON.

CITRUS.

FERN.

SALINITY.

MINERALITY.

FRESHNESS.

FINESSE.

BALANCE.

This is elegant Chablis.

2023 — RIPE, GENEROUS, STILL FRESH

2023 was one of the warmest years Burgundy has seen.

Even warmer than 2022.

But Drouhin reports that the fruit reached perfect maturity.

And importantly, the wines retained:

Freshness.

Finesse.

Terroir identity.

The vintage brings more:

Yellow fruit.

Flowers.

Amplitude.

Generosity.

But without losing the mineral edge that makes Chablis Chablis.

That makes 2023 particularly attractive if you want a Chablis that is enjoyable young without sacrificing structure.
