Expect an elegant, beautifully aromatic sparkling rosé showing:

Made the Traditional Way

This is not a simple sparkling rosé.

Dominique Portet produces it using the traditional method—the same fundamental process used to produce Champagne.

The current release is made from:

55% Pinot Noir
45% Chardonnay

The fruit is hand-picked before secondary fermentation takes place in bottle. The wine then spends a minimum of 24 months resting on lees in Dominique Portet's cool cellars, building texture and complexity before disgorgement. Dosage is kept to just 5g/L, maintaining freshness and precision.

That extended lees ageing explains the beautiful combination of fresh berries, citrus and florals with subtle pastry and brioche complexity.

Upper Yarra Valley Fruit

The fruit comes from the Upper Yarra Valley, where altitude and cool nights allow Pinot Noir and Chardonnay to ripen slowly while retaining excellent natural acidity.

The current Brut Rosé comes from vines grown at approximately 250 metres elevation, with the cool conditions helping preserve the freshness and finesse essential for premium sparkling wine.

Even more interesting is the use of reserve wine. The current NV blend is anchored by the 2023 vintage but incorporates 15% reserve wines reaching back to 2013, adding another layer of maturity and complexity.
