About the Wine
Today, Château Pavie is recognised as one of the greatest estates in Saint-Émilion, but the 2000 vintage was the wine that announced its arrival on the world stage.
The vineyard sits on the famous limestone plateau and south-facing slopes of Saint-Émilion, where exceptional drainage and limestone soils consistently produce wines of incredible depth and longevity.
The 2000 blend is composed of:
- 70% Merlot
- 20% Cabernet Franc
- 10% Cabernet Sauvignon
The wine spent 26 months in 100% new French oak, creating remarkable richness while preserving the purity and character of the fruit. The result is a wine of extraordinary concentration, texture and balance that continues to amaze more than twenty years after harvest.
Food Pairings
Perfect with:
- Beef Wellington
- Dry-aged Wagyu
- Roast pigeon
- Venison loin
- Slow-roasted lamb
- Black truffle dishes
- Mature Comté or aged Gouda
Cellaring
Although already delivering an unforgettable drinking experience, the 2000 Château Pavie remains remarkably youthful.
Drink now after several hours of decanting or cellar confidently for another 20–30 years, where further layers of truffle, cedar, cigar box, forest floor and mineral complexity will continue to emerge.
