Opulent • Concentrated • Iconic Barossa Appassimento Style

“A luxuriously deep, ultra-concentrated Shiraz — profoundly rich, beautifully polished and one of the great ‘Gregor’ releases.”

Tasting Notes

Appearance:
Black-purple and completely opaque, showing the density and intensity that defines the Gregor style.

Aroma:
Explosive aromatics of blackberry compote, black cherry, dark plum, cocoa nib and dried fig.
Background layers of espresso, sweet spice, roasted herbs and fine cedar elevate the bouquet into something truly decadent.

Palate:
The partially air-dried Shiraz fruit delivers a sumptuous, velvety and powerful palate — one of the richest expressions in Australia.
Expect waves of:

  • ripe blackberries and mulberries

  • dark chocolate and mocha

  • fig, plum syrup and clove

  • savoury mineral depth

The texture is plush and mouth-coating, while polished tannins and beautifully judged acidity keep everything in perfect balance.
A wine of size, but also poise.

Finish:
Long, structured and immensely satisfying, finishing with black fruit, spice and lingering dark chocolate. Pure luxury.

About the Wine

The Gregor is Hobbs’ iconic take on the Appassimento technique, where Shiraz is partially air-dried prior to fermentation.
The process intensifies flavour, structure and aromatic depth, resulting in one of the richest, most distinctive Shiraz styles in the Barossa Ranges.

The 2021 vintage is widely regarded as one of the strongest in recent memory, and this Gregor is among the finest ever released.

Food Pairings

  • Slow-braised lamb shoulder

  • Wagyu rump with truffle jus

  • Barossa pork belly

  • Flourless dark chocolate cake

Why We Love It

The 2021 Gregor is hedonistic, opulent and incredibly impressive, yet still balanced and structured enough to deserve a long future in the cellar.
At $120, this is elite Barossa craft at a price that dramatically overdelivers.

A must-have for lovers of big, powerful Shiraz — and one of Hobbs’ greatest modern releases.
